I donâ€™t know about all of you, but Iâ€™m (not to mention my skin) surely suffering from all these heavy foods Ive been gobbling down over Chanukah. I mean, who can resist those sizzling latkas, freshly baked donuts, all that pasta, and chocolate. Oh, loads and loads of chocolate.
I promised myself I can have eight days of basking in the glory of all that delicious food, and then its back to business; no ifs ands or buts.
I kept to my word, as soon as the holiday was over, I religiously resumed my thrice-weekly exercise class (no excuses this time), drinking my required water, and then on to the quest to find myself some new interesting recipes that will talk to my tastebuds. Did I forget to mention that I need it to be healthy? Oh dear, but yes, that is the point.
Well, I couldnâ€™t have had better news to share with you guys, I found this scrumptious recipe on CookKosher called Blueberry Orange Muffins. They became my number one go to food for breakfast or just a quick snack during work. They're delicious, moist, and best of all, low-fat. I need to make them on a constant basis to keep up with the demands of my family and co-workers. Yes, they're that good! Enjoy!
Easy healthy, lower-fat recipe.
1 cup oats
1 cup orange juice
3 cup white whole wheat flour
4 tsp baking powder
1 cup sugar
1 tsp salt
Â½ tsp baking soda
3 eggs, lightly beaten
Â½ cup oil
Â½ cup applesauce
1Â½ cup fresh or frozen blueberries
1 Tbsp grated orange peel
