While summer is my real reading time (here's my summer cookbook review), I manage to sneak in some cookbook reading into the cold winter days. Here are a couple of my new favorites.
If you love baking and enjoy learning new techniques, this book is for you. Recipes include variations of challah, bagels and tempting Jewish bakery classics – such as checkerboard cake, rainbow cookies, egg kichlech and black & white cookies. What I love about this book, aside from the cultural and historical information, is that all the recipes are given in bakers’ percentages, in addition to cups , oz and grams. Baking is a form of chemistry, and professional bakers tend to use exact formulas when baking. These formulas were past down from generation to generation and the authors’ brake it down for the home cook. Even if you don’t plan on baking anything, the book is full of history lessons and sweet memories from Jewish bakeries.
Did you know? Chiffon Cake was unknown in Jewish Europe; in fact it was invented by Harry Baker, a California insurance-salesman turned caterer, in 1927. In 1947 he sold his recipe to General Mills, which featured it in ‘Better Homes & Gardens’ a year later. It took America by storm and quickly became the standard in Jewish bakeries during the 1950’s, 60’s and 70’s.

Levana Kirshenbaum is passionate about cooking healthy and her newest book really takes it to another level. “The Whole Foods Kosher Kitchen” is all about eating healthy tasty food. It is full of tips and advice on cooking from scratch, and brimming with gluten-free & whole grain recipes and their many variations. One of my favorite chapters in the book is “The Pantry – edible gifts to yourself and beyond”, with recipes for dressings and sauces such as homemade cocktail sauce, Thai and Teriyaki sauce.
Healthy food doesn’t have to boring and in classical Levana’s style, it’s an entertaining read. The book will be republished in a larger and more beautiful format in March. You can grab a copy of the book right now if you can’t wait.

While I love Jewish/kosher cookbooks, I always find little gems in other cookbooks as well. Momofuku Milk bar is a cookbook with recipes of innovative and addictive cookies, pies, ice creams and other goodies. An example of one of the cookies is the ‘composite cookie’ - a chunky chocolate chip cookie studded with crunchy salt pretzels and coffee grounds. And If that doesn’t entice you, this one will - cornflake chocolate-chip marshmallow cookie. The book is not only about ice creams and cookies, there is also a full chapter devoted to bread. While all the recipes could be used in a kosher kitchen, the only ingredient I had trouble with is milk powder. Currently, cholov yisroel milk powder is hard to find, but you can easily replace it with pareve soy milk powder. If you like to bake and don’t mind spending time in the kitchen, this book is for you. Most recipes have 2-4 components in it and do take some time to assemble. But the recipes are so different and delicious that it’s worth the effort.

If you know someone that keeps a gluten free diet, you know how hard it is to bake delicious gluten free baked goods. Not to mention that most gluten free recipes, contain xanthium gum and other hard to find ingredients. ‘Gluten Free Cupcakes’ is a small soft cover book with 50 cupcake recipes made with almond and coconut flours. The photos are so beautiful and the recipes contain variations such as apple spice, triple chocolate and cinnamon crumb cupcakes, I may just make them all year round, eventhough I have no problem baking with flour.
Last but not least, we can’t mention new cookbooks without mentioning my own. Shameless plug.
Fresh & Easy is all about ‘ordinary ingredients’ that yield ‘extraordinary results’. It’s fun, fresh and easy food that your family will enjoy. Best part of it all, you’ll rarely have to leave your house, as most of the ingredients should be right in your pantry. In the cookbook you’ll find fun everyday food, like teriyaki sesame chicken, home fries and sweet chili chicken sandwiches. I devote sections to brunch, soups, salads, desserts with a section for traditional Jewish foods as well.

I am currently studying to become a Pastry Chef and am planning to enter the Kosher world upon graduation. I have been practicing making pareve desserts that taste great and would LOVE to learn more ways to do so. I also LOVE baking bread, especially Challah! I love cookbooks that are geared to the busy mom with easy-to-make recipes, universally accepted ingredients that don't scare off kids (or husbands for that matter!). Gourmet cookbooks just sit on my shelf - i need user friendly ones! Lots of photos are a huge plus too!

To RGLevy, I too, have very picky eaters and I found the cookbook Fresh and Easy by Leah Schapira great. My boys just look through the cookbook and they find lots of recipes which they like on paper for sure. I made numerous chicken recipes and they were a big hit by their difficult standards! All the recipes are clear and easy to prepare and taste delicious.

To YehuditW, one way we can create beautiful relationships with our children, spouse and family is by cooking their favorite foods or for that matter any delicious food. Cookbooks help us with that! The way to anyone's heart is through their stomach!
