This was one of our favorite breakfast when I visited my grandparents in LA. Every time I make this, the aroma of this egg takes me back in time to those good old days.
2 tsp butter
2 cloves garlic, minced
2-3 plum tomatoes
- salt and pepper, to taste
Saute the garlic in melted butter, over medium heat for 1-2 minutes.
Add the diced tomato and saute, stirring occasionaly, until the tomatoes soften. This should take approximately 8-12 minutes. At this point, the mixture should resemble a chunky tomato sauce.
In a separate bowl, whisk the eggs. Add the salt and pepper. Add the eggs to the frying pan and stir to combine the eggs with the tomatoes, until the eggs are scrambled.
