Delicious even as leftovers!!! Simple, easy and nutritious. You can add any other vegetables of your choice, squash, eggplant, sweet potato etc....
1 kg Pack of Pasta fusili or penne
3 Peppers (any color)
3 Red onions
750 gram Cherry Tomatoes
3 Portobello Mushrooms (opt)
½ cup Olive Oil
3 Tbsp Garlic Powder
Cook the pasta according to package instructions. Make sure its al dente.
Slice the peppers, onions, cherry tomatoes and mushrooms. Place in 9 by 13 roasting pan. Pour the olive oil all over it, and sprinkle with garlic powder. Bake 350 for 35-45 mins.
Combine with cooked pasta and mix well. Return to oven and let bake another 20 mins.
