This recipe was from the NY times and is a #1 in my recipe meat section. It is quick, easy and delicious. A hit from the first time i made it, it's become our favorite yomtov or special occasion recipe. I passed it on to friends and family, all agreed it's a winner.
1 (15 oz) jar apricot jam
2 Tbsp onion soup mix
1 tsp garlic powder
1 tsp soy sauce
2 tsp ketchup
4 chicken quarters
Bring 1st 5 ingredients to a boil. Turn flame down to low and cook until syrupy.
Place chicken, skin side up in 9x13inch pan. Pour hot glaze over washed chickens Add 1 cup water to pan. Bake at 400F covered for 2 hours.
OPTIONAL: You can add 1-2 bags of baby carrots around the chicken before baking.
