This recipe comes courtesy of my friend Chana, but it's been gluten-free-ized.
1 can whole cranberry sauce
½ can crushed pineapple
1½ cup Bob's Red Mill gluten-free oats
1 cup brown sugar
¾ cup oil or applesauce
1½ cup gluten-free flour mix
1 tsp xanthum gum
¼ tsp baking soda
⅛ tsp salt
For crust, combine the gluten-free oats, brown sugar, oil/applesauce, gluten-free flour, xanthum gum, baking soda, and salt.
For filling, mix together cranberry sauce, pineapple, and a pinch of salt.
Place half of the crust mixture at the bottom of a 9x13 pan. Top with the filling. Then place the rest of the crust mixture on top.
Bake at 400 degrees Fahrenheit for 25 minutes.
