INGREDIENTS
4-6 sweet onions
- Beer Batter:
1¾ cup flour
1½ tsp baking soda
1½ tsp salt
3 Tbsp yellow cornmeal
1½ cup light beer- 12 oz.
1 large egg
To prepare teh beer batter, combine the dry ingredients. Add the beer and egg. Refrigerate for 10-15 minutes.
Meanwhile, trim the ends of the onion, being careful that the bottom stays intact. To form the blossom, cut the onion into 8-10 wedges. Slices should not extend all the way to the bottom so that the onion remains in one piece. Repeat with remaining onions.
Heat oil in a pot or a deep fryer over medium- high heat. Dip the onions into the batter, making sure to separate the wedges so that the batter covers all pieces. Fry the blossoms in the hot oil for 8 minutes, turning over if necessary.
Serve with honey mustard sauce.
