INGREDIENTS













  • 1 Tbsp oil










  • 1 onions, diced










  • 2 cloves garlic, crushed










  • 2 cups rice










  • 12 oz frozen broccoli florets or any mixed vegetables










  • 1 (8 oz) can mushrooms, liquid reserved










  • 3 cup water










  • 1 Tbsp salt










  • 1 Tbsp paprika










  • ½ Tbsp black pepper










  1. In a pot add oil and saute onion and garlic until transparent.



  2. Add rice and saute for another 6-7 minutes. Pour rice mixture into a pan. Add florets and mushrooms and mix to combine.



  3. Cook water, and reserved liquid until it boils. And spices and let cook until combined.



  4. Pour over rice mixture. Cover and bake on 350 for 30-401/2 minutes until rice is soft.

I also used brown rice. The only frozen vegetable I had was broad-cut green beans, and I used fresh sliced mushrooms. Green beans and mushrooms are surprisingly good together! This recipe was easy to put together and tasty as well. It's especially nice that it can be adapted to use whatever you have on hand.

I made this tonight, along with the Bissli schnitzel (chicken cutlet) recipe. This is delicious, quick and easy. I used brown rice, added 1 extra cup water and let it bake 15 minutes more. Nice change from the typical potato side dish.
