I also used brown rice. The only frozen vegetable I had was broad-cut green beans, and I used fresh sliced mushrooms. Green beans and mushrooms are surprisingly good together! This recipe was easy to put together and tasty as well. It's especially nice that it can be adapted to use whatever you have on hand.

I made this tonight, along with the Bissli schnitzel (chicken cutlet) recipe. This is delicious, quick and easy. I used brown rice, added 1 extra cup water and let it bake 15 minutes more. Nice change from the typical potato side dish.
