I have about a dozen apple kugel, pie, soufflé, cobbler... recipes. This is by far my favorite one. You can bake them in mini pie crusts for individual servings. Recipe by Leah Schapira

RECIPE

INGREDIENTS
½ cup flour + 2 T.
½ cup brown sugar
⅓ cup white sugar
½ tsp cinnamon
½ cup margarine
5 Cortland apples, peeled and sliced
1 Tbsp lemon juice
½ cup sugar
3 Tbsp flour
½ tsp cinnamon
⅛ tsp nutmeg (optional)
1 9" quiche pie crust
Prebake the pie crust for 10-15 minutes at 350F.
Combine the first five ingredients by hand to form coarse crumbs.
Mix the apple slices with the remaining ingredients for the filling.
To assemble, layer the apple slices on top of the pie crust. Stagger the slices so they will all tower to the center. Pat the crumbs down over the apples to form a crust.
Bake in a preheated oven to 450F for 15 minutes. Lower the oven to 350F and bake for 45 minutes.
