INGREDIENTS
3½ cup sugar
2¾ cup oil
8 eggs
2 tsp baking powder
2 tsp baking soda
2 tsp cinnamon
4½ cup flour
2 tsp vanilla sugar
½ cup orange juice
6 carrots, grated
- TOPPING:
4 (12 oz) cream cheese
1 (4 oz) stick butter
3 tsp vanilla sugar
1 cup confectioner's sugar
Muffin: Mix all ingredients. Pour into greased muffin trays.
Bake in a preheated oven at 325F for 20 minutes.
Topping: Melt the butter and and place it with all the ingredients in a mixer. Mix well. Taste and add more confectioner's sugar, if needed. Top the muffins with the topping and serve.
