This is one of those simple, no fuss, perfect for everynight dinner recipes. For a healthier version, skip the onion soup mix and sprinkle on spices instead (salt, black pepper, paprika, parsley flakes, rosemary...)

INGREDIENTS













  • 12 mini red potatoes










  • 2 onions, sliced










  • 1 red pepper, thinly sliced










  • 1 yellow pepper, thinly sliced










  • 1 orange pepper, thinly sliced










  • 4 cloves garlic










  • 4 Tbsp oil










  • 4 Tbsp onion soup mix










  1. Wash the potatoes well. Place in 9x13 pan with rest of vegetables.



  2. Drizzle oil and sprinkle soup mix. Mix well.



  3. Bake covered at 425F for 1 hour. Uncover and bake for an additional 1/2 hour.
