This is one of those simple, no fuss, perfect for everynight dinner recipes. For a healthier version, skip the onion soup mix and sprinkle on spices instead (salt, black pepper, paprika, parsley flakes, rosemary...)
12 mini red potatoes
2 onions, sliced
1 red pepper, thinly sliced
1 yellow pepper, thinly sliced
1 orange pepper, thinly sliced
4 cloves garlic
4 Tbsp oil
4 Tbsp onion soup mix
Wash the potatoes well. Place in 9x13 pan with rest of vegetables.
Drizzle oil and sprinkle soup mix. Mix well.
Bake covered at 425F for 1 hour. Uncover and bake for an additional 1/2 hour.
