Easy, delicious chicken to serve over rice.
1 tsp oil
1 lb boneless chicken, cut into strips
1 (1.25 oz) package taco seasoning
14.5 oz diced tomatoes
⅓ cup apricot or peach preserves
Coat chicken in taco seasoning.
Heat oil and cook chicken until browned.
Add rest of ingredients and bring to boil. Cover and simmer for 30 minutes.
