4 chicken bottoms
- oil, for frying
1 Tbsp corn starch
¾ cup water
½ cup ketchup
½ cup vinegar
2 Tbsp lemon juice
½ cup brown sugar
¾ cup sugar
1 (20 oz) can pineapple chunks, drained
Fry the chicken in oil for 15 minutes, then turn over and fry 15 minutes on the other side.
Mix the cornstarch with the water and set aside.
In pot over flame, add the ketchup, vinegar, lemon juice and sugars.
Mix for 4 minutes on high flame.
Add the cornstarch mixture and bring to a boil, then turn off the flame.
Place the chicken in 9x13-inch pan. Pour sauce over the chicken. Add the pineapple chunks on top.
Bake at 350*F for 1 1/2 hours. Uncover and bake for an additional 30 minutes.
