A wonderful accompaniment to grilled cheese, this pareve soup also benefits from a dollop of plain yogurt or sour cream. Although the red pepper flakes are minimal, if you don't like them, they are easily eliminated.

INGREDIENTS













  • 1 Tbsp olive oil










  • 3 garlic cloves, chopped










  • ¼ tsp red pepper flakes










  • 1 28-ounce can diced tomatoes










  • 2 tsp dried basil










  • 1½ cup canned vegetable juice, such as V8










  • 0 salt & pepper to taste










  1. Heat oil in a medium saucepan. Add garlic and red pepper flakes, stirring occasionally until softened, about 3 minutes. Add tomatoes (without draining), basil, and vegetable juice.



  2. Heat on medium and simmer for about 15 minutes. Season to taste with salt and pepper.
