These muffins are so good that you won't just eat one, and they are super healthy, too!
-To make these muffins lower in fat, you can substitute half of the oil with unsweetened apple sauce.
-Although you can use any type of nut, toasted walnuts taste the best.
-You can also use other spices like cloves, allspice, ginger, and nutmeg along with the cinnamon to enhance the aroma and spiciness of the muffins.
2 cup Whole Wheat Flour
2 tsp Baking Powder
2 tsp Cinnamon
½ tsp Baking Soda
¼ tsp Sea Salt
2 cup Finely Shredded Carrots
1 cup Finely Chopped Apples
½ cup Raisins
½ cup Nuts, chopped
½ cup Shredded Coconut, (optional)
¾ cup Extra Virgin Olive Oil, Coconut Oil (melted)
2 tsp Vanilla Extract
1 cup Xylitol or, 1 tsp. Green Stevia Powder, or ¾ Honey
¼ cup Organic Milk, Raw and Whole if Available (optional)
Preheat oven to 350 degrees Fahrenheit.
Sift sift the first five ingredients together, and then mix in the next five ingredients.
Whisk together the next four ingredients and add to the dry mixture by gently folding it in with a spatula. If batter is too dry/stiff, add milk 1 Tbl. at a time until a stiff batter forms.
Pour into greased or paper-lined muffin tins and bake on the middle rack for 30 minutes. If muffins are still not done, continue baking until a toothpick inserted into one comes out clean, or a digital thermometer reads 210 degrees. Cool and enjoy!
