A little involved but soo good!
6 8" round tortillas
1 lb chicken breast, cut into 1" pieces
½ cup frozen corn kernels
½ red pepper, diced
1 Tbsp Mrs Dash lemon fiesta seasoning mix
1 garlic clove, crushed
½ cup salsa
½ cup guacamole
Heat a medium sized saute pan over medium heat.
Mix chicken pieces with seasoning mix approx 10 min before cooking. Add to saute pan, add in garlic and cook through x 5-8min
Then add corn kernels and diced red pepper, cook additional 5-8 min until vegetables are cooked to your prefered texture.
Spoon chicken mixture onto a tortilla, fold two parallel sides in then roll up the other ends. Heat a grill pan on high heat and place tortilla filled w/ chicken on grill pan x 1-2 min to make grill lines.
Serve w/ salsa and guacamole
