A little involved but soo good!









  • 6 8" round tortillas

  • 1 lb chicken breast, cut into 1" pieces

  • ½ cup frozen corn kernels

  • ½ red pepper, diced

  • 1 Tbsp Mrs Dash lemon fiesta seasoning mix

  • 1 garlic clove, crushed

  • ½ cup salsa

  • ½ cup guacamole

  1. Heat a medium sized saute pan over medium heat.

  2. Mix chicken pieces with seasoning mix approx 10 min before cooking. Add to saute pan, add in garlic and cook through x 5-8min

  3. Then add corn kernels and diced red pepper, cook additional 5-8 min until vegetables are cooked to your prefered texture.

  4. Spoon chicken mixture onto a tortilla, fold two parallel sides in then roll up the other ends. Heat a grill pan on high heat and place tortilla filled w/ chicken on grill pan x 1-2 min to make grill lines.

  5. Serve w/ salsa and guacamole
