Very easy--and easy to freeze. Requires no pre-cooking the veggie. And it's delicious to boot. Quadruple the recipe and stock your freezer!

INGREDIENTS













  • 1 lb broccoli or spinach, checked, chopped (fresh or frozen fine)










  • 4 large eggs










  • 2 Tbsp mayonnaise










  • 1 Tbsp onion soup mix OR










  • 1 onion, chopped & sauteed plus ½ t salt (if no soup mix)










  • 1 pie crust, or sprinkle tin with wheat germ and cooking spray










  1. Mix together all ingredients (except crust, if using). This recipe makes about an 8 x 8 square pan or a pie pan size.



  2. Pour into crust or pan and smooth top.



  3. Bake uncovered at 375F for about 30 minutes, just until kugel is set and starting to get golden around the edges. Cooking time will vary by size



  4. Can be frozen after cooking.



  5. (To make dairy: instead of mayo, add 1/4 cup cheese--cheddar, mozzarella, or parmesan are good. Sprinkle with more cheese before baking.)
