
I'm crazy about this salad and can't make it often enough. Try making the salad with duck or meat instead of salmon; the results are fantastic. For a nicer presentation, you can cut the salmon into cubes instead of fillet strips.

INGREDIENTS
1 cup teriyaki sauce
1 cup brown sugar
6 slices salmon fillet
- sesame seeds
¼ cup mayonnaise
¼ cup oil
¼ cup maple syrup
3 Tbsp blue Bartenura wine
2 tsp sugar
- salt
- black pepper
- lettuce
- green apples
- craisins
- honey glazed almonds
Mix the teriyaki sauce and brown sugar together. Pour over fish and sprinkle sesame seeds over fillet strips. Bake at 350*F for 25 minutes.
Blend the mayonnaise, oil, maple syrup, wine, sugar, salt and pepper until creamy. Set dressing aside.
To assemble, place lettuce on bottom of the plate. Dice the green apples and scatter on top of lettuce. Scatter the craisins and almonds and drizzle with dressing. Place salmon on top of salad and serve.
