Great winter salad.

INGREDIENTS













  • 2 bunches fresh arugula (5 cups)










  • 1 grapefruit










  • ⅓ cup shelled pistachios










  • ⅓ cup good, strong olive oil










  • 1 Juice from lemon (use Meyer lemons, if in season)










  • ¼ tsp kosher salt










  • ½ tsp black pepper










  1. Peel and remove the pith with a serrated knife and sections cut free from membranes.



  2. Place the arugula, avocado, grapefruit, and pistachios in a large bowl.



  3. Pour in the olive oil, squeeze lemon juice over, and season with salt and pepper.



  4. Toss well to coat. Serve alongside grilled meats or fish.
