A sweet and delectable side that goes with everything - turkey, chicken, meat - or even just by itself. Kids love the sweetness, and parents love the health benefits of the sweet potatoes!
4 cup hot mashed sweet potatoes
⅓ cup margarine (or butter)
2 Tbsp granulated sugar
2 eggs, beaten
½ cup milk (or non-dairy creamer)
⅓ cup pecans, chopped
⅓ cup packed brown sugar
2 Tbsp flour
2 Tbsp margarine (or butter, melted)
Preheat oven to 325*F. Grease a 2qt casserole pan.
Mix sweet potatoes, 1/3 C margarine and granulated sugar. Beat in eggs and milk. Pour into greased pan.
Combine pecans, brown sugar and flour. Stir in 2 Tbsp of melted margarine. Sprinkle mixture over sweet potatoes. Bake at 325*F for and hour.
