This is an easy to make and very delicious mushroom stuffing that tastes great with basic roasted chicken.
1 can of mushrooms, sliced
1 bag of crackers (like Ritz)
½ medium yellow onion, diced
1 carrot (grated)
1 dash of salt and pepper
Sautee the diced onion and mushrooms until the onions are translucent.
Crush the crackers with the juice from the can of mushrooms. Mix in the carrots, egg (beaten), salt and pepper.
Bake on it's own (350*F for 25-30 minutes) or with chicken (350*F for 1-1 1/2 hours).
