delicious, vegetarian bean chile served in crispy tacos with melted cheese.
1 onion, diced
3 cloves garlic, minced
1 (15 oz) chopped tomatoes
1 (15 oz) black or kidney bean
1 (15 oz) chick peas
¼ tsp cumin
¼ tsp crushed red pepper
1 tsp chili powder
Saute onion and garlic in olive oil.
Add cans of tomatoes, beans and chick peas.
Add spices and chili powder according to taste.
Simmer on low for 20 minutes.
Serve in warmed tacos with grated cheese inside.
