I was looking for a healthier brownie recipes, and I came across this one. There is only 1/2 cup oil ande no eggs in this recipe. I baked them and they were surprisingly good and disappeared very quickly.
½ cup oil
1½ cup sugar
2 tsp vanilla
½ cup cocoa
2 cup flour
11½ tsp baking soda
1 tsp salt
½ cup chopped walnuts
2 cup shredded zucchini (not packed down)
Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch baking pan.
In a large bowl, mix together the oil, sugar and vanilla until well blended. Combine the flour, cocoa, baking soda and salt; stir into the sugar mixture. Fold in the zucchini and walnuts.
Mixture will be dry-ish and crumbly
Press evenly into the prepared pan.
Bake for 40 minutes in the preheated oven, until brownies spring back when gently touched. (may need more time if zucchini had high water content)
