This goes beyond your shnitzel recipe. The chicken sticks are extra crispy and the dipping sauce is sweet and hot so that you can eat a lot of it without burning your mouth. This is a fun recipe that is always a big hit.
1.5 lb Chicken (5 cutlets)
- Black pepper
- pinch chili powder (optional)
½ cup Flour
1 tsp Baking powder
- Panko, Bread or Corn flake crumbs
- SWEET HOT SAUCE:
¾ cup Chili Sauce (Chili Pinkati in Israel)
¾ cup Honey
3 Tbsp sugar
¼ cup water
1 cup Thousand island dressing
in a sauce pot add all the chili sauce, honey, sugar and water and bring to a boil. Lower the flame and add the thousand island and let it simmer for 10 minutes.
Cut the chicken into long strips and dredge in the flour with the baking powder.
Prepare in a bowl 2 beaten eggs (4 if you will double dip for an extra crunchy layer.) Spice with some paprika, garlic, salt and black pepper. Add a pinch of chili powder if you want. If you want to double dip then separate the eggs at this point into two bowls.
Add the chicken into the eggs and mix it well. Then bread the chicken in Panko, bread or cornflake crumbs (or mix some of each.) For the extra crunch re-dip each chicken strip into the extra eggs and bread again.
Fry the chicken in a pan until golden. Serve with sauce on the side.
