I'm trying to lose weight, and it’s a day off school due to the snow storm... This recipe is easy to make, yet full of good nutrition and taste delicious! Don't tell your spouse it’s dietetic and he'll never know! The kids, for sure won’t pick up on it! This can also be done in a crock pot before you leave to work and come back 5 hours later to a warm wholesome meal!!!!

INGREDIENTS













  • 2 cup LONG GRAIN BROWN RICE










  • 4 cup WATER










  • 3 Tbsp SOY SAUCE










  • - DRIZZLE LIGHT OLIVE OIL










  • 1 ONION- CUBED










  • 3 CLOVES GARLIC-DICED










  • 4 STALKS CELERY-CHOPPED










  • 1 LARGE RED PEPPER-CUBED










  • 5-6 FRESH MUSHROOMS (IF YOUR RUNNING LATE, FROM A CAN WILL DO)










  • - pinch SALT AND PEPPER TO TASTE










  1. RINSE THE RICE AND PUT INTO A 9"X13" ALUMINUM PAN



  2. ADD THE WATER, SALT, PEPPER, SOY SAUCE AND OIL



  3. SAUTE THE ONION AND GARLIC FOR 5-7 MINUTES TILL ITS TENDER, NOT CRISPY AND ADD IT TO THE RICE



  4. ADD ALL CUT UP VEGETABLES



  5. COVER THE PAN WITH HEAVY DUTY SILVER FOIL AND PLACE IN THE OVEN ON 350 FOR AN HOUR AND A HALF. CHECK AFTER AN HOUR AND A HALF IF ALL WATER IS ABSORBED, IF NOT GIVE IT ANOTHER 15 MINUTES
