A quick, easy, Pesach-friendly apple kugel recipe that even the kids will like. Shredding the apples instead of chopping them makes for a moister kugel. I like to use Granny Smith apples, but any will do. For fun, I also make this recipe in muffin cups, for little mini-kugels.
2 cup hot water
2 cup matzah farfel
¾ cup sugar
4 apples, peeled, cored, and shredded.
1 Tbsp cinnamon
6 egg whites
Preheat oven to 375 degrees. Grease a 9x13 baking dish with cooking spray.
Beat the egg whites until stiff.
Put farfel into large bowl, then pour hot water on top.
Add sugar, apples, and cinnamon. Fold in the egg whites. Pour into baking dish. (Dust top with more cinnamon if you desire.)
Bake at 375 for 45 minutes or until golden brown.
