The Mediterranean flavors in this dish are delicious. Roasting the tomatoes makes them so sweet and almost melt! Goes great with couscous.

INGREDIENTS













  • 2 cup cherry tomatoes










  • 1½ tsp chopped fresh thyme










  • 1 tsp olive oil










  • ¼ tsp salt










  • ¼ black pepper










  • 2 cloves garlic, minced










  • 2 (6 oz) salmon fillets










  • 2 Tbsp lemon juice










  1. Preheat oven to 400 degrees.



  2. Combine tomatoes, thyme, olive oil, salt, pepper, and garlic on a baking sheet coated with cooking spray. Toss gently.



  3. Bake for 15 minutes. Then add salmon to the pan and bake an additional 10 minutes until fish flakes easily with a fork.



  4. Spoon tomatoes over the salmon, drizzle with lemon juice, and serve.
