
This salad dressing is fantastic! I add it to the following recipe, but feel free to use any combination of vegetables that you prefer. The dressing keeps fresh for a few days in the refrigerater. I like to serve this salad alongside the eggs on Shabbos or with a fish dish. For those weight conscious people, you can use a sugar substitute- I like the taste with real sugar.

INGREDIENTS
1 mixed lettuce bag
1 box cherry tomatoes halved
2 avocado cubed
1 red small pepper
1 yellow small pepper
1 orange small pepper
1 green small pepper
- dressing:
½ cup lemon juice
½ cup sugar or substitute
¼ cup oil
1 small grated onion
1 tsp salt
1-2 tsp poppy seed
Dice peppers into tiny pieces. Cut cherry tomatoes in half and cube avocados. Mix all with lettuce, any kind, in bowl.
Grate small onion or blend with hand blender together with rest of dressing beside poppy seeds. When dresing is smooth, add the poppy seed.
Mix dressing with salad. Start by adding half the amount and adjust according to your taste buds.
