
Another take on the typical waldorf salad. It's an unusual salad that is delicious and is a great starter on the table. I like to fill this salad into avocado shells ( just cut in half and empty them out) and then top it off with one walnut in the center. If you don't like avocado, just double the celery and add 1/2 tsp salt. This looks pretty served in a glass serving bowl.

INGREDIENTS
3 medium green apples-diced with peel
1 Tbsp lemon juice
1 Tbsp sugar
½ cup mayonnaise-can use low fat
½ cup diced avocado
½ cup chopped celery
½ cup chopped walnuts
- whole walnut for garnish
- avocado shells
Mix diced apples , avocado, celery, and chopped walnuts together.
Mix mayonnaise with sugar and lemon juice. Add to salad. Mix well. Stuff into empty avocado shells and place one whole walnut on to.
