So good and addictive! I like to send bowls of caramel popcorn to simchas or as thank you gifts.
1 nonstick cooking spray
3 quarts of popped popcorn
3 cup unsalted mixed nuts (optional)
1 cup brown sugar
½ cup karo corn syrup (light or dark)
½ cup margarine
½ tsp salt
½ tsp vanilla
½ tsp baking soda
Spray roasting pan with cooking spray. Combine popcorn and nuts in pan. Place in 300℉ oven while preparing glaze.
In heavy 2-quart saucepan, stir brown sugar, corn syrup, margarine and salt.
Stirring constantly, bring to a boil over medium heat. Without stirring, boil for 5 minutes.
Remove from heat. Stir in vanilla and baking soda.
Pour over warm popcorn, stirring to coat well.
Bake at 300℉ for 45 minutes, stirring occasionally.
Allow to cool and break apart before serving.
