This cake is quick and easy to make. Delicious plain or iced. Makes perfect cupcakes.

INGREDIENTS













  • 4 eggs










  • ¾ cup oil










  • 2 cup sugar










  • 2¼ tsp baking powder










  • 2 tsp vanilla










  • 1 cup soy milk










  • 2½ cup flour










  1. Preheat oven to 350 degrees. Prepare 9x13 pan or tube pan with cooking spray, or line 24 cupcakes with paper.



  2. Beat eggs on high until fluffy. Add sugar and oil



  3. While mixing, add baking powder, vanilla, soy milk and flour.



  4. mix well and pour into prepared pans



  5. bake for approximately 1 hour or 35 minutes for cupcakes

This is a super delicious cake and so easy to make! My sister makes it all the time, and I could eat the whole thing myself, if I didn't have help!
