I love potatoes but really don't like the potato salads with lots of mayonnaise. This version originally comes from the Balabustas choice cookbook and a favorite in my house.

INGREDIENTS













  • 2½ lb mini red potatoes










  • 1 bunch scallions (5-6)










  • ⅓ cup dried parsley leaves










  • 2 Tbsp vinegar










  • 1½ tsp salt










  • 1 tsp mustard










  • ⅓ cup oil










  • - dash black pepper










  1. Cook potatoes in salted water for 20-30 minutes, until tender. Drain water and cube potatoes.



  2. Slice the scallions and add to potatoes. mix together everything else with the parsley leaves and pour over potatoes.



  3. It's best if you refrigerate it overnight before serving. Serve at room temperature
