This quishe goes over really well with my entire family - kids included! I dont think they even realize that the "green stuff" is spinach!
1 lb cottage cheese
1 cup spinach
½ cup shredded cheese
¼ tsp salt
¼ tsp garilc powder
1 pinch pepper
1 pie crust
Make sure the spinach is chopped. If it is frozen- be sure it has been defrosted and drained from extra water.
Mix all the ingredients together in one bowl.
Pour into a pie crust. Note- puff pastry pie crusts taste much better in this recipe as opposed to the graham cracker crust.
Sprinkle the top with a bit more shredded cheese and bake at 350* until the top is golden brown.
