INGREDIENTS













  • 1 cup oats










  • 1 cup orange juice










  • 3 cup white whole wheat flour










  • 4 tsp baking powder










  • 1 cup sugar










  • 1 tsp salt










  • ½ tsp baking soda










  • 3 eggs, lightly beaten










  • ½ cup oil










  • ½ cup applesauce










  • 1½ cup fresh or frozen blueberries










  • 1 Tbsp grated orange peel










  1. Combine oats and orange juice in a small bowl. Set aside.



  2. Combine the dry ingredients in a large bowl. Form a well in the center of the mixture.



  3. Add the wet ingredients (including oat mixture) into the well and and mix by hand until just wet. (Do not overmix.)



  4. Fold in blueberries and orange peel.



  5. Pour batter into greased muffin cups.



  6. Bake for 15 minutes at 400℉.
