Delicious and easy!
1 store-bought pie crust
2 boxes frozen spinach
1 med onion, diced (optional)
½ cup sliced mushrooms (optional)
1 Tbsp mayonnaise
1 Tbsp flour
1 tsp onion powder
1 tsp garlic powder
1 tsp salt
½ tsp pepper
Defrost and drain spinach. (Can substitute broccoli for half of the spinach if desired).
Saute onions and mushrooms in a little oil until soft. (a few minutes).
Add to spinach.
Add mayo, flour, eggs and spices. (The amount of eggs can vary a lot without ruining the taste - you just change the consistency a bit. I've made this with as few as 3 and as many as 6.The fewer eggs, the more spinach-dense your quiche will be. You can also use an equivalent amount of egg-white
Mix well and pour into pie crust.
Bake at 350, uncovered, for 45 minutes to an hour until set.
