INGREDIENTS













  • 1 store-bought pie crust










  • 2 boxes frozen spinach










  • 1 med onion, diced (optional)










  • ½ cup sliced mushrooms (optional)










  • 1 Tbsp mayonnaise










  • 1 Tbsp flour










  • 6 eggs










  • 1 tsp onion powder










  • 1 tsp garlic powder










  • 1 tsp salt










  • ½ tsp pepper










  1. Defrost and drain spinach. (Can substitute broccoli for half of the spinach if desired).



  2. Saute onions and mushrooms in a little oil until soft. (a few minutes).
    Add to spinach.




  3. Add mayo, flour, eggs and spices. (The amount of eggs can vary a lot without ruining the taste - you just change the consistency a bit. I've made this with as few as 3 and as many as 6.The fewer eggs, the more spinach-dense your quiche will be. You can also use an equivalent amount of egg-white



  4. Mix well and pour into pie crust.



  5. Bake at 350, uncovered, for 45 minutes to an hour until set.
