A very easy and delicious lentil soup for the slow cooker. This is a very adaptable recipe - throw in whatever additional veggies you have sitting around.
1 lb brown lentils
1 (4 oz) can of tomato paste
2 bay leaves
½ tsp dried rosemary
1 tsp dried thyme
3 ribs celery (optional)
6 cup water or vegetable broth
Chop onion, carrots and celery (if using). Put in crockpot.
Add lentils, broth and other ingredients to crockpot.
Cook on high for 8-10 hours, until lentils are tender.
