Nice and filling salad, that could be an appetizer or a supper dish.
½ cup rice, cooked and cooled
5 eggs, cooked and cooled
½ (16 oz) package mock crab sticks, thawed
8 oz mozzarella cheese, grated
1 (15 oz) can sweet corn kernels, drained
½ cup mayonnaise
Dice crab sticks into small cubes and place in a medium bowl.
Grate eggs into the same bowl.
Add grated mozzarella cheese, sweet corn kernels, rice and mayonnaise and mix well.
Add salt and pepper according to taste.
