
I got this recipe from my friend, who in turn got it from her friend, so I am not sure about the original copyright. It is a delicious side dish for Shabbos or Yom Tov, that even my picky 5-year old eats. It can also double as a dessert.

INGREDIENTS
3 sweet potatoes
½ cup olive oil
¼ cup orange juice
3 eggs
1½ cup sugar (or less, divided)
1 tsp vanilla extract
¼ cup margarine, melted
¼ cup flour
1 (8 oz) can crushed pineapple, strained
Boil sweet potatoes, cool, peel and mash.
Combine mashed sweet potatoes, olive oil, orange juice, 2 eggs, 1 cup sugar (or less, to taste) and vanilla extract in a medium bowl and mix well.
Place the mixture in a 9 inch round baking pan.
In another bowl combine margarine, 1/2 cup sugar, flour, 1 egg and crashed pineapple. Pour the topping over the first mixture (already in the baking pan).
Bake on 350 degrees for about 1 hour.
