I got this recipe from my friend, who in turn got it from her friend, so I am not sure about the original copyright. It is a delicious side dish for Shabbos or Yom Tov, that even my picky 5-year old eats. It can also double as a dessert.

INGREDIENTS













  • 3 sweet potatoes










  • ½ cup olive oil










  • ¼ cup orange juice










  • 3 eggs










  • 1½ cup sugar (or less, divided)










  • 1 tsp vanilla extract










  • ¼ cup margarine, melted










  • ¼ cup flour










  • 1 (8 oz) can crushed pineapple, strained










  1. Boil sweet potatoes, cool, peel and mash.



  2. Combine mashed sweet potatoes, olive oil, orange juice, 2 eggs, 1 cup sugar (or less, to taste) and vanilla extract in a medium bowl and mix well.



  3. Place the mixture in a 9 inch round baking pan.



  4. In another bowl combine margarine, 1/2 cup sugar, flour, 1 egg and crashed pineapple. Pour the topping over the first mixture (already in the baking pan).



  5. Bake on 350 degrees for about 1 hour.
