Trying to find a recipe for rice and vermicelli and lacking actual vermicelli I made use of what was in my house. This a low sodium version to the stuff you buy in a box and lacks the msg junk. It is a nice aromatic lightly flavored rice dish.
½ cup orzo
1 cup Jasmine Rice
4 cup "No-Chicken" Broth
1 small onion, diced
¼ cup canola oil
1 pinch salt
½ tsp parsley (optional)
Sautee onions until translucent or slightly brown (about five minutes). Add orzo and toast until slightly brown (about five minutes)
Add Jasmine rice (uncooked). Add soup stock. Bring to a boil. Reduce and simmer for about 25 minutes.
Add salt and parsley if you want.
