Fantastic party dip. My husband would eat this with a spoon if I let him. (from the Chicago Tribune)
2 Tbsp olive oil
1 large sweet onion, thinly sliced
1 clove garlic, minced
1 Tbsp balsamic vinegar
⅔ cup light mayonnaise
⅓ cup low-fat yogurt, preferably Greek
¼ cup finely chopped basil
0 freshly ground pepper
Heat oil in a large skillet over medium heat; add the onion. Cook, stirring often, until caramelized, about 30 minutes.
Add garlic and vinegar; cook, stirring, until garlic softens, about 5 minutes. Pour the onion-garlic mixture into a small bowl.
Stir in the mayonnaise, yogurt, basil and pepper to taste. Refrigerate 30 minutes.
