Light but tasty. Good for Shabbos or anytime. I am loving the Eden bug-free herb cubes, they've sparked a bunch of new experiments in my cooking!
3 frozen basil cubes
1 frozen dill cube
1 frozen garlic cube
1 tsp lemon juice
1 tsp honey
½ onion, diced
3 pinch salt to taste
In a small bowl, mash up the cubes into the lemon juice and honey. Add salt. Add extra herb cubes if you like heavy herb flavor or have a large chicken.
Sprinkle some of the diced onion into the bottom of a roasting pan. Place the chicken on top.
Rub the herb mixture under the skin of the chicken, as well as over parts that aren't covered by skin. Get it all over, though the green specks won't be sticking everywhere.
Sprinkle the remaining onion pieces over the chicken. Cover and roast until soft, turning the chicken over about midway.
