All the flavors of a kid-friendly Mexican dinner in a bowl. For a pareve version I use a fake meat substitute like morningstar.
1 lb ground beef
15 oz reduced sodium beef broth (or no chicken broth if pareve)
15 oz diced tomato (1 can)
1.25 oz taco seasoning (1 packet)
11 oz whole kernel corn with sweet peppers (i can)
1 Tortilla chips, optional
In a large saucepan, cook beef until browned. Drain off fat. Stir in broth, beans, tomatoes and taco seasoning. Bring to a boil over a high heat; reduce heat and let simmer, uncovered, for 15 minutes, stirring occasionally.
Stir in corn. Serve with tortilla chips, if desired.
