Moist chocolatey muffins with some hidden healthy ingredients that make it a guilt free treat.
2 cup flour
1½ cup ground flax seed
1 cup quick oats
2 tsp baking soda
3 tsp baking powder
1 cup cocoa powder
2 cup chocolate chips
2 cup orange juice
1 (15 oz) can pumpkin, squash, or sweet potato
2 cup brown sugar
2 tsp vanilla
Preheat 400 degrees
Mix dry ingredients in one bowl and beat wet ingredients in separate bowl. When fully mixed, combine wet into dry and gently stir until just combined.
Fill cupcake pans at least 3/4 full as there is little rise.
Store in refrigerator or freeze.
Bake 20-30mins or until toothpick comes out clean
