Caramel frosting is great for cupcakes and doughnuts!
½ cup brown sugar
3 Tbsp butter or margarine
¼ cup heavy cream or non dairy whip topping
1 cup confectioners' sugar
In a saucepot, bring the brown sugar and butter to a low boil.
Stir until it thickens slightly for 1 minute.
Remove from heat and add the cream and confectioners' sugar. Mix well by hand or with an immersion blender.
Dip your cupcakes or doughnuts into warm frosting. Let dry.
When it's still warm, you can decorate the tops with candied chopped nuts, coconut flakes...
