INGREDIENTS













  • 6 medium zucchini squash










  • 2 medium red potatoes










  • 3 carrots










  • 2 medium onoions










  • 5 eggs










  • 5 stalks parsley, chopped










  • 1 Tbsp salt










  • ¾ Tbsp black pepper










  • 3 Tbsp oil










  • 3 Tbsp heaping flour










  • - oil, for frying










  1. Peel the squash, potatoes, carrots and onions.



  2. Shred all the vegetables in a food processor (if you grate it too finely, you'll have too much liquid, so it's better to shred it)



  3. Mix the vegetables with the eggs, spices, oil and flour.



  4. Strain the entire mixture well.



  5. Form into patties and fry in a skillet on both sides until it's ready.
