The most delicious blintzes ever! My husband told me after we got married that he thought he was a blintze maven until he tasted these! When i make the filling I taste it to see if it needs more sugar. I sometimes add sour cream to the mixture!

INGREDIENTS
4 eggs
¼ cup sugar
1 cup flour
1 cup milk
¼ stick margarine melted
½ Tbsp vanilla sugar
1 lb farmer cheese
1 egg
¼ cup sugar
½ Tbsp vanilla sugar
Blend all first 6 ingredients in a blender
Fry the crepe in an 8" frying pan or use a crepe maker.
In a separate bowl combine the remaining ingredients.
Fill and Enjoy!
In a frying pan coat the bottom of the pan with butter. Fry the blintzes on each side till lightly golden.
