
This is a combination of two recipes to make an award winning, great tasting muffin. Perfect as a side dish, even when you have those guests that you gotta impress... can even be done without the mixer!
Can be made with a can of pumpkin or freshly cooked pumpkin or butternut squash.

INGREDIENTS
- Muffin:
3 cup Flour
2 cup Sugar
1½ tsp Cinnamon
½ tsp Baking Powder
½ tsp Baking Soda
15 oz Cooked butternut squash
1 cup Oil
3 Eggs
- Topping:
¼ cup Brown sugar
½ cup Oats
⅓ cup Flour
1 pinch Salt
2 oz Margarine
Combine first five ingredients in a bowl.
Mash the cooked Butternut squash and measure 15oz. Add to mixture.
Add oil and eggs and mix.
In a separate bowl combine all the topping ingredients to make a crumb. (if necessary add a little extra margarine)
Sprinkle on top of muffin. Place in oven and bake 30-40 mins on 350.
