Usually, when I serve ice cream sandwiches, my guests complain that the cookie is too frozen and they can’t bit into it. To solve this, I stopped freezing the cookie with the ice cream and only assemble it right before dessert. This ice cream has a very light lemon taste. If you prefer it more tart, add some additional lemon juice to the ice cream.

INGREDIENTS













  • - LEMON ICE CREAM:










  • 2 (8 oz) container non-dairy whipped topping










  • ½ cup sugar










  • 4 extra large eggs










  • 1 Tbsp vanilla sugar










  • 5 Tbsp lemon juice










  • - COOKIE:










  • ½ cup margarine (1stick)










  • - zest of lemon










  • 1 pinch salt










  • ¾ cup sugar










  • 1 egg white










  • 1¾ cup flour










  • 1 tsp baking soda










  • 2 Tbsp lemon juice










  1. To prepare the ice cream, beat the egg whites until stiff, gradually adding in the sugar. Set aside. Beat the whip well. Add the egg yolks, vanilla sugar, and lemon juice. Fold in the whites to the whip. Freeze.



  2. Preheat oven to 350°F.



  3. To prepare the cookies, cream the margarine, with the lemon zest, salt, sugar, and egg white. In a small bowl, combine the flour and baking soda. Add the flour mixture to the mixer. Add the lemon juice and mix well.



  4. Roll into a 9-10 inch long roll. Wrap well in a piece of parchment paper and freeze 6 hours or overnight.



  5. Remove from freezer and let sit out 10 minutes. With a sharp knife, slice 22-24 slices (about ¼ inch thick). Prepare two cookies sheets with parchment paper. Place 12 cookies on each sheet. I like to adjust the cookie so that it’s nice and round.



  6. Bake for 14 minutes.



  7. To serve, place one scoop of lemon ice cream on top of a cookie. Press the second cookie on top. Serve with raspberry sauce - recipe #
