More than 30 years age, I received a booklet from the company Fleischmann's Yeast. They had a recipe for bagels. I have tried many others since then, but nothing compares to the taste of this recipe. It is delicious; crusty outside, chewy inside. You can make many different variations, including caraway,sesame,poppy seed,onion, and many more. It definitely is worth the effort.









  • 4½-5 cup unsifted flour

  • 3 Tbsp sugar

  • 1 Tbsp salt

  • 2 (¼ oz) pkgs. active dry yeast

  • 2 Tbsp margarine

  • 1 Tbsp sugar

  • 2 tsp salt

  • 1 egg white+ 1 Tbsp water- egg wash

  1. Mix 1 1/2 cups flour, 1 Tbsp salt, 3 Tbsp sugar and yeast in mixer.

  2. Heat 1 1/2 cups water and margarine. Add to dry ingredients; beat 2 minutes at medium speed. Add 1/2 cup flour; beat at high speed 2-3 more minutes. Slowly add rest of flour on low speed-until you have a stiff dough. Set in greased bowl, turn to grease top. Cover; let rise in warm spot for 1 hour.

  3. Punch dough down. Let rest 15 min. In large pot heat 1-2 inch water over medium heat to a simmer. Add remaining sugar and salt.

  4. Divide dough in 12 pieces. Shape pieces into smooth balls. With floured finger poke a 1-inch hole in each. Drop 3 bagels at a time in simmering water. Cook 3 minutes. Turn and cook 2 minutes. Turn again; cook 1 min. more. Drain on towels and continue with rest of bagels.

  5. Place all bagels on a greased baking sheet. Make egg wash and brush on bagels. Sprinkle with any topping- coarse salt, sesame etc.

  6. Bake at 375 for 20-25 minutes. Remove and cool. Enjoy!
